Green bananas in sweet coconut cream and cardamom

A simple but extremely tasty recipe

We have already talked about and proposed a classic recipe of matoke or green banana, but today we want to propose you a sweet, unpublished version: matoke in coconut cream and cardamom.
This fruit is very similar to the banana, but only in appearance, it grows mainly in the region of Kisii but has now spread to other parts of the country also because in addition to its use in the kitchen is used in the production of liqueurs and beer. Rich in simple carbohydrates, potassium and fibre, it is also considered a good source of vitamins A, B and C.
Here is the recipe for this irresistible dessert.

Ingredients:

2-3 green bananas

1 cup of water

1 cup of coconut milk

2 tablespoons of sugar

3-4 cardamom pods ( cinnamon )

Remove the ends of bananas and peel them.
First cut them lengthwise and then into smaller pieces, but not too much.
Put the water cup in a non-stick pan, the cardamom pods open to allow the seeds to come out and the bananas cut.
Bring to the boil and cook until the fruit softens, about 10 minutes.
In the meantime the water will have evaporated (if not wait for it), then add the coconut milk and cook over medium heat until it thickens, it is advisable not to stir because the bananas will be soft and could break. Finally, add the sugar over very low heat and cook for another 5 minutes.
For those who want to make the recipe even more fragrant, it is possible to add cinnamon sticks or powdered cinnamon.
A gourmet variation: line a baking pan with a roll of puff pastry, pour in the cooked bananas according to the recipe and bake for about 20 minutes at 200ºc.
Take out of the oven and leave to cool, sprinkle with a little sugar and cinnamon powder. Result: a quick and easy dessert, with a delicious taste.
