Green papaya spaghetti with coconut, another delicious recipe of Swahili cuisine

Tambi za mapapai, an original and unusual dessert

Although originally from South America, papaya has spread widely in Kenya and is well integrated into Swahili cuisine. An interesting and tasty example is green papaya spaghetti cooked in coconut milk. Tambi za mapapai, the local name for coconut milk and papaya cake, is very popular during Ramadhan.                                                                                                                                                    
The unripe papaya is practically tasteless, however it has the characteristic of absorbing the taste and aroma of the various spices with which it is combined.

HERE IS THE RECIPE:

Ingredients for Tambi za mapapai:

1 green papaya

1 can of coconut milk

1 glass of water

Sugar ( one or two spoons according to your personal taste )

cardamom ( one teaspoon )

Peel the papaya and cut it into thin strips as long as possible (similar to spaghetti) with a slicer or a sharp knife.
Put the spaghetti in a small pot and add the glass of water and a little coconut milk until about half of our papaya noodles are covered.

At this point add the sugar and ground cardamom to taste and cook until the papaya is soft and the coconut milk is almost completely dry.
Serve the papaya noodles in a serving bowl. In the meantime heat the remaining coconut milk in a saucepan and let it thicken. Season the spaghetti with this sauce and enjoy the Tambi za Mapapai hot or cold.
