The "matoke" or "matoki" are green bananas, also known as plane tree, not excessively sweet, which also in Kenya, as in most of Africa, have various utilizations. Besides flour and bread, they are used as potatoes in stews.
HERE IS THE MOST POPULAR RECIPE IN KENYA

Supu ya nyama na matoke

Ingredients for 4 people:

300 days of diced beef
2 or 3 matoke (depending on size) peeled and cut into two or three pieces.
Chopped tomatoes.
Chopped onion.
Spinach or mchicha
Ginger
Garlic paste
Turmeric powder
Cumin powder
Salt qb
Ground black pepper

PREPARATION:

In a pot add all the ingredients except spinach and banana.
Cover with a little water and boil until the meat is half cooked, then add the peeled and cut bananas, previously put to flavour in the lemon juice.
If necessary, add more water to the soup.
Towards the end add the spinach and continue cooking until the meat and bananas are soft.
Salt and pepper to taste.

Usually served with chapati.
