Tamarind Chicken, a swahili tasty dish

An original flavours mixing of Kenya cuisine

The goodness of free-range chicken in Kenya is no mystery. In most cases it is simply cooked on the grill, but there are dishes of Swahili cuisine that contemplate other pleasant encounters of flavors. One of these is tamarind chicken (kuku wa ukwayu).

Ingredients for 4 people

A whole chicken in pieces
Ground black pepper or lemon pepper
Paprika
Cumin qb
Curcuma qb
Salt qb
One teaspoon of pasta or tamarind sauce

Preparation

Marinate the chicken with the above ingredients.
In a pan, add a little oil and cook the marinated chicken until it starts to crunch, but without cooking it completely.
While the chicken is cooking prepare these ingredients, but remember to turn the chicken occasionally and add a little water.

For the sauce:

4 blanched tomatoes
4 tablespoons of tamarind paste
Halls
Cumin and turmeric(one hold)
A clove of garlic
Chopped coriander

Mix these ingredients until a uniform sauce is obtained.
Pour the mixture over the chicken and continue cooking, stirring continuously.

Serve preferably with rice or chapati
