Chicken with spices and lime is a tasty land dish from the Kenyan coast.
The combination of chicken with sweet and sour is a classic in Indo-Eastern cuisine, as is the combination with ginger and turmeric.

Ingredients:
1 whole chicken
two medium onions
a clove of garlic
a carrot
a celery stalk
chives
a root of ginger grated ginger
coriander
meat spices (if procured in Kenya, garam masala and beef mix spices)
chili powder
a tablespoon of oil

For the vegetable broth: one onion, one carrot, two celery stalks, one potato, one tomato...
Preparation: Make a clean cut in the belly of the chicken and clean the glands and intestines, place it on a baking tray with a mixture of onions, celery and carrots. Add a tablespoon of oil and a ladle of broth. Bake in the oven for about 40 minutes at 180 degrees, adding more broth if necessary.
In a saucepan, heat two ladles of broth and dilute for a couple of minutes ginger, chopped chives, chopped garlic, coriander, chilli and meat spices.
When the chicken is ready, take it out of the oven, add the spices and finish cooking in the oven for another five minutes.
Finally sprinkle with lemon and serve with boiled basmati rice flavored with masala.
